When we first thought up our series on how to put leftovers to good use, we wanted to find ways to help our readers make meals as efficiently as possible. With that in mind, we hit the jackpot today. Both of the recipes we’re sharing in this article are simple, almost to the point of effortless. Much like our brisket recipe, our first recipe utilizes a slow cooker, making it easy to follow and easier to enjoy. And did we mention there are only six ingredients?

Unlike previous leftover dish articles, these recipes will create enough leftovers for more than two people. If you want to cut down on how much you make, you can get a smaller pork loin. Just make sure you adjust the other ingredients to reflect that change!

Also, if you’re familiar with our series on leftover recipes, you’ll know that the goal here is to save you money and time. Usually, our Diet recipes will focus on healthy tweaks or recipes that can help you lose weight. You won’t find that here. The following recipes will be tasty and easy, but they won’t help you shed pounds.

We’re not going to make them especially fattening, and we cut calories where capable, but there aren’t many ways to make a pulled pork sandwich healthy. (Though we might try Getting Creative with Comfort Food: Healthy Pulled Pork!)

Brown Sugar Pork Loin Recipe

For the Pork Loin

  • 4lb of boneless pork loin
  • 1 tbsp of salt
  • 1 tbsp of pepper
  • 1½ cups of brown sugar
  • 1 tbsp of Dijon mustard
  • 1 tbsp of apple cider vinegar

Directions

  1. Evenly cover the pork loin with the salt and pepper and place in a slow cooker or crockpot.
  2. In a bowl, mix together the brown sugar, Dijon mustard, and apple cider vinegar.
  3. Cover the pork loin with the brown sugar mixture.
  4. Cook on low for 8 to 10 hours.
  5. Cut off two 1-inch thick slices of pork per person.
  6. With two forks, shred the remaining pork and place it in a storage container.

We picked brown sugar pork loin for a specific reason. Pork is a very flavorful meat that can blend with a lot of different tastes. If you use a certain first recipe, the second recipe won’t work. In this case, our brown sugar pork loin is about to become barbecue pulled pork sandwiches in four easy steps.

For the Sandwich

  • Leftover pork loin
  • Your favorite barbecue sauce
  • Sandwich Rolls

Directions

  1. Cover a saucepan with cooking spray and heat the pulled pork over low heat.
  2. Add your favorite barbecue sauce and stir it in until the pork is thoroughly covered.
  3. Heat the pork and barbecue sauce.
  4. Serve onto rolls.
